Ingredients
1 lb lean ground beef
2 tablespoon salted butter
1 cup diced yellow onion
1 small green bell pepper - diced small
8 oz brown mushrooms - diced small
½ teaspoon garlic powder
1 teaspoon salt
½ teaspoon ground black pepper
4 tablespoon ketchup
1 tablespoon Worcestershire sauce
1 cup beef broth
1 tablespoon cornstarch
6 slices provolone cheese
6 brioche or hamburger buns
Instructions
Brown the beef: Heat a large skillet over medium heat. Add ground beef and cook for 5–6 minutes, breaking it up as it browns. Drain excess grease if needed.
Sauté the veggies: Push beef to one side (or remove to a plate), melt the butter in the same pan. Add diced onion, green bell pepper, and mushrooms. Sauté for 5–6 minutes until softened and golden.
Season and sauce: Stir in salt, pepper, garlic powder, ketchup, and Worcestershire. Mix well.
Add broth: Pour in beef broth, scraping up any browned bits from the pan. Stir and bring to a simmer.
Thicken: Sprinkle in cornstarch and stir until dissolved. Let simmer for 1–2 minutes to thicken. Add a splash of water or broth if the mixture gets too thick.
Melt the cheese: Turn off the heat. Lay provolone slices over the beef. Cover with a lid and let sit for 1–2 minutes, until melted and gooey.
Serve: Spoon the cheesy beef mixture onto toasted buns and serve warm.
